Rustic Rosemary Cottage Bread

Yesterday afternoon, while I was watering the little rosemary on the kitchen windowsill, I caught myself smiling.

Not because of the rosemary itself—though it does smell wonderfully hopeful—but because I’d remembered the flour-smudged recipe card tucked safely on the kitchen table.

Some recipes ask to be planned.

This one simply waited.

The afternoon was quiet, the kettle had already sung twice, and sunlight had settled across the kitchen floor in that familiar way that makes everything feel just a little softer.

It seemed like exactly the right sort of day to bake bread.

Smokey appeared the moment I reached for the flour.

He inspected every ingredient with great seriousness before deciding the empty mixing bowl was the most interesting object in the room.

His contribution to the baking process was largely supervisory.

He considered it essential.

There is something wonderfully reassuring about making bread.

The world becomes very small for a little while.

Measure.

Stir.

Knead.

Wait.

The dough asks only for patience.

Not speed.

Not perfection.

Just enough care to help it become what it was always meant to be.

Perhaps people aren’t so different.

By the time the loaf disappeared into the oven, the whole cottage smelled of rosemary, warm yeast, and the promise of butter waiting patiently on the counter.

Gather a Little Kitchen Magic

Even Smokey wandered into the kitchen again, convinced he had somehow baked the entire thing himself.

I decided not to argue.

Some victories are harmless.

When the loaf finally emerged, its crust was deeply golden, crackling softly as it cooled.

I sliced off one warm piece—strictly for quality assurance, of course—added a little salted butter, and watched it disappear almost immediately.

The recipe card was right.

It really is best on a cool afternoon with butter.

I think I’ll keep it somewhere easier to find this time.

Although…

Rustic Rosemary Cottage Bread

Makes: 1 rustic loaf

Ingredients

  • 3½ cups (420g) bread flour
  • 1½ teaspoons fine sea salt
  • 2 teaspoons instant yeast
  • 1 tablespoon olive oil
  • 1¼ cups (300ml) warm water
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon honey (optional, but lovely)
  • Flaky sea salt for topping
  • A little extra olive oil for brushing

Instructions

  1. In a large mixing bowl, combine the flour, salt, yeast, and chopped rosemary.
  2. Stir together the warm water, olive oil, and honey, then pour into the dry ingredients.
  3. Mix until a shaggy dough forms, then knead for 8–10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a clean tea towel, and let rise for about 1 hour, or until doubled in size.
  5. Gently shape the dough into a round loaf and place it on a parchment-lined baking tray or in a lightly floured Dutch oven. Cover and let it rise again for 30–45 minutes.
  6. Preheat your oven to 425°F (220°C).
  7. Brush the top lightly with olive oil, sprinkle with flaky sea salt, and score the loaf with a sharp knife.
  8. Bake for 30–35 minutes, until deeply golden and the loaf sounds hollow when tapped underneath.
  9. Allow the bread to cool for at least 20 minutes before slicing.

Kitchen Witch’s Notes

  • Fresh rosemary gives the brightest flavor, but dried rosemary works beautifully if that’s what your cupboard offers.
  • This bread is especially lovely with salted butter, a drizzle of honey, or dipped into warm soup.
  • Leftover slices make wonderful toast the next morning with a cup of tea.
