Blueberry Lemon Muffins

This morning’s basket wasn’t very full.

Just enough blueberries to stain my fingertips a cheerful shade of purple and remind me that the sweetest things rarely arrive all at once.

I carried them home anyway.

A little lemon zest, a splash of vanilla, and a handful of blueberries folded gently into the batter were all the kitchen needed to begin smelling like summer.

There’s something wonderfully hopeful about muffins.

They don’t ask for a special occasion.

They don’t need fancy dishes or perfect timing.

They’re happiest shared at the kitchen table with butter melting into their warm centers and a cup of tea close at hand.

Gather a Little Kitchen Magic

By the time the first tray had cooled, Smokey had already taken up his usual position beside the table.

Not begging.

And truthfully…

🌿 Moonbeam Cottage Blueberry Lemon Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ cup sugar
  • Zest of 1 lemon
  • 2 large eggs
  • ½ cup melted butter
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1½ cups fresh blueberries

Directions

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly butter each cup.

In a large bowl, whisk together the flour, baking powder, salt, sugar, and lemon zest.

In a separate bowl, combine the eggs, melted butter, milk, and vanilla. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries, being careful not to overmix.

Divide the batter evenly among the muffin cups, filling each about three-quarters full.

Bake for 20–25 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Let them cool for a few minutes before serving warm with butter, a drizzle of honey, or simply as they are.

I find they disappear rather quickly, especially when shared on the porch with good company and the sound of birdsong drifting through the garden.
